The Department of Industry, Science and Resources is seeking feedback on the proposed mandatory country of origin labelling (CoOL) for seafood sold in hospitality settings. This includes restaurants, cafés and takeaways.
CoOL for seafood will give consumers clear, consistent information about where their seafood comes from. This will help them decide what seafood to buy.
The information standard proposed to be introduced under the Australian Consumer Law will use the Australian-Imported-Mixed (AIM) model. AIM will require hospitality businesses to use a letter – at a minimum – to indicate the seafood’s origin:
- A (Australian)
- I (imported)
- M (of mixed origin containing both Australian and imported seafood).
The Department of Industry, Science and Resources is now consulting on an exposure draft information standard and draft explanatory statement that could be used to introduce these changes.

The consultation is open on the department’s consultation hub until 17 April 2025.
